Come Monday, who else feels like you need a day in between Saturday and Sunday? Mondays are back to work and back to school and I’m still on a weekend hangover from binge-watching Stranger Things the night before. Monday evenings for us also means my son has his weekly karate lesson, and I always struggle with coming up with a quick, nutritious, and tasty dinner for us all that fits into our Meatless Monday* rotation.

With three kids and the pre-dinnertime witching hour, my household is a circus. We tried the Chik’n Pot Pie, a twist on a classic favorite. It is creamy and herby, and more importantly, this Veggie Bowl is made with Chick’n Strips–100% vegan and lightly seasoned, offering 23g of protein at 150 calories. The kids don’t even know they’re not eating chicken, and I’m not complaining! It brings new meaning to that old phrase “winner winner chicken dinner!” Next Meatless Monday I want to try the Japanese Soba Noodles or the Moroccan Medley.

*Fun fact: Meatless Monday is not a new trend. During World War I, the U.S. Food Administration urged families to cut back on meat on Tuesdays to reduce consumption of key staples to aid the war effort. In recent years Meatless Tuesdays has been revived for different reasons and replaced by a zingier name, Meatless Mondays. Now we can all agree that MM has a much better ring to it, am I right?!
