Come Monday, who else feels like you need a day in between Saturday and Sunday? Mondays are back to work and back to school and I’m still on a weekend hangover from binge-watching Stranger Things the night before. Monday evenings for us also means my son has his weekly karate lesson, and I always struggle with coming up with a quick, nutritious, and tasty dinner for us all that fits into our Meatless Monday* rotation.
With three kids and the pre-dinnertime witching hour, my household is a circus. That’s why the new MorningStar Farms® Veggie Bowls checks off all those boxes for me – it’s easy to heat up, healthier as a veggie cuisine, and just tastes good. We tried the Chik’n Pot Pie, a twist on a classic favorite. The kids don’t even know they’re not eating chicken, and I’m not complaining!
